Food and Safety Training

Daventry District Council is an accredited Chartered Institute of Environmental Health training provider and offers a range of food and safety courses and training at reasonable prices.

The training is delivered at our Lodge Road offices by our experienced Environmental Health Officers on a number of dates throughout the year.

Foundation Food Safety

This is our most popular course and will benefit anyone working where food is prepared, cooked and served. It is relevant to all catering operations, including pubs, hotels, restaurants, travel, contract catering, charity kitchens, fast-food outlets, in hospitals, care and nursing homes, schools, prisons and the armed forces.

The course programme is as follows:

  • Introduction to Food Safety
  • Legislation
  • Food hygiene requirements
  • Food Safety Hazards
  • Taking Temperatures
  • Refrigeration, Chilling & Cold Holding Foods
  • Cooking, Hot Holding & Re-heating Foods
  • Food Handling
  • Principles of Safe Food Storage
  • Cleaning
  • Food Premises and Equipment.

The courses run at our offices in Lodge Road, Daventry (NN11 4FP) from 9.30am until 5pm with an hour break for lunch (not provided). A course book is included in the fee and there is a final assessment in the form of a short multiple choice paper.

Intermediate Food Safety

This is a theoretical and practical course created to help anyone in a supervisory role to have the food safety knowledge and confidence to carry out their role effectively.

Anyone working in a supervisory position within a food business is accountable for the safety of the food produced. There needs to be a thorough understanding of food safety management procedures based on HACCP (Hazard Analysis and Critical Control Points) principles, and monitoring these controls and the staff who implement them is of crucial importance.

The course covers in more detail the topics covered in the Foundation Food Safety course and is a three day programme, running from 9:30am until 5pm each day.

The course includes some practical work that can be undertaken at your place of work, with a final assessment by a multiple choice examination.
